Macclesfield head chef celebrates ten years at Chestergate Bistro

A Macclesfield chef is celebrating ten years since he joined his place of work.
Macclesfield resident Danny Novosad has now spent ten years working at Chestergate Bistro.
In that time, the friendly face has worked for two owners, outlasted five prime ministers, and worked his way to the top of the kitchen.
The Head Chef met with Macclesfield Nub News to reflect on his decade working for the same employer.
"It doesn't feel like it has been ten years", said Danny.
"I came here as a second chef, but soon realised that I wasn't as good as I thought, and I was missing some skills.
"But I was lucky to learn and pick them up from the previous owner, who taught me a lot. But soon, I showed my quality."
A lesser chef would have hung up his apron or moved to another venue. But not Danny.
"I'm no quitter," proclaimed Danny.
"It was hard, but worth it. I found it hard to integrate at first.
"But I had the support of the really great Polish community here, although I am not Polish, I am from the Czech Republic."
Danny has previously worked in local venues Shrigley Hall and Mottram Hall, but his favourite has been Chestergate Bistro in Macclesfield.
The bistro, which will mark 15 years in business this year, has a menu that is a 'best of European' dishes.
"This job is my passion," he revealed.
"It is in my blood, my father and uncle have had restaurants.
"Working here is what I like, it is a small restaurant, I can play with the food, I am appreciated, and I love the quality that goes into it."
2024 is cause for double celebration for Danny, as it is the 20th anniversary since he moved to the UK from a small Czech town that he states 'reminds him of Macclesfield'.
Furthermore, it has also been one year since Danny was made Head Chef at the west Chestergate venue.
"What we do is simple things on the menu, make it tasty, and great quality", Danny shared.
"Everything is fresh, there is no frozen, no shortcuts."
When pressed to pick a favourite dish, Danny elected to not pick a favourite, but did indicate how proud he was of their steaks.
"When people look up on Google 'where's the best place to have steak in Macclesfield', it comes up with Chestergate Bistro," he added.
Danny leads a team of three, with both lunchtime and evening menus to cook.
The family-man told Macclesfield Nub News his favourite thing about his job.
"My favourite part of the job is looking forward to the next day," said Danny.
"I like working for an independent business, as if I need to speak to someone, I can go straight to my manager."
And the business itself supports their fellow independents. Local suppliers used are Cheshire Fish and Macclesfield butcher Spearings.
And on the restaurant floor, they buy flowers from the florists a few doors down.
Danny admits, he takes so much pride in his food, that he struggles to take his family out for a meal elsewhere without being picky!
"Please come and try Chestergate Bistro, we are one of the best," concluded Danny.
