Macclesfield: New RedWillow beer uses 19th century brewing techniques

Heritage Porter is a 5.3% full-bodied porter, which takes inspiration from 19th century brewing recipes.

The dark malts are generously hopped with East Kent Goldings.

The Macclesfield brewers launched the beer late last month, and we popped down to their Park Green premises to find out more about it.

"Heritage Porter is part of a Heritage series of beers we're making at RedWillow," said Teg Farrall of RedWillow Brewery.

"The Heritage part comes from the malt we are using.

"Malts and malting processes have changed over time and some of the more interesting and flavourful malts had been discontinued. 100 years ago, they were harder to brew with, but arguably had more flavour.

"Some of those heritage grains have now been reintroduced. For this we used chevallier malt, which was the dominant malt for most beers from 1820-1920.

"Heritage Porter has a lovely complexity because it has a blend of four dark malts, which also give it it's deep colour.

"We have chocolate, amber, black and brown malts all working together alongside the sweet nutty flavours of the Chevallier Malt.

"It has a roasty bitterness which smooths out with a lovely chocolate note.

"It is fairly light in body for the percentage, and it is absolutely delicious."

It is available on cask at RedWillow bar at £3.90 a pint or you can purchase cans to take away or buy online from RedWillow brewery.

"We've done one brew of it, primarily in cask but most of it in cans," added Teg.

"We've only produced about 1800 litres of it. [Roughly 3167.5 pints].

"But because it is very good and popular so far, we will probably produce this one-off again in intermittent periods."

RedWillow are a Macclesfield brewery which make a huge variety of beers, including Heritage Porter, on Byrons Lane.

They serve their drinks and food at their bar on Park Green.

The family-run Macclesfield brewery was started in 2010, by Toby and Caroline McKenzie.

As well as serving the local area, bars and pubs throughout the North of England and beyond, one of their biggest stockists is the Avanti Coast Railway line, which offer their Tilting Ale to train passengers.

The company is currently undergoing a major expansion, which will more than double their brewery capacity by allowing them to brew twice a day, with an increased volume in the fermenters.

This means RedWillow can brew more varied projects in the future. They will host an open day for the new brewhouse to the public in January.

The exact date is to be confirmed. They are already hiring for new positions.

RedWillow's bar is open Tuesday-Sunday.

Tuesday-Thursday is from 4pm-10pm. Friday is from 4pm-11pm.

Opening times for Saturday is 1pm-11pm, and Sunday is 1pm-10pm.
