Another addition is a signature dish of new Macclesfield-based chef Matt Owen, being a Braised Beef Hash.

The meat, sourced from the butchers just down the road, is braised in a Bollington Best beer, and served with potato, roast peppers, shallots, kale, fried egg and salsa verde.

The best-seller of the new dishes added to the menu is French Toast, a dish hard to come across in the centre of Macclesfield.

Avocado and Eggs, alongside Coconut Porridge are also new additions to the brunch menu which is served from 10-2pm.

As well as dishes with Macclesfield meat and Cheshire Fish on the menu, there are six non-meat options on the brunch menu, and five non-meat options on the lunch menu.

"On the lunch menu the steak sandwich and halloumi salad are selling really well."

The new menu compliments the small, open kitchen, staffed with Macclesfield talent.

It is not the only new food-related offering The Fountain has recently introduced.

"After the Christmas party season last year, we've decided to start pushing for parties all year round," added Sam.

The Fountain also sells bottles from parent company Bollington Brewery Company venue, with beer brewed at their Adlington Road brewery ready to be consumed in store or taken away. "We've got a buffet menu we can put on, and can host a party for all occasions from 20-180 people."

"The old town is coming up in Macclesfield, the whole town is improving at the moment and quite quickly with planning applications and Crossings opening round the corner.

"But I think there is lots more that we can do round here to help drive the development of this part of town."

The Fountain hires 15 people. They are currently seeking more weekend staff. Anyone interested in joining their team should email [email protected].

"I find it very refreshing to work at The Fountain," added Sam.

"I find it very relaxed. I've worked for the big chains before, and the big boss you don't get to see a lot of the time. But I'm here talking to you [Macclesfield Nub News] with Lee right now."

"I like working in Macclesfield. It is a great town full of culture and independence. I love working when the Treacle Market is on."

The new brunch menu is served from 10am-2pm. Lunch/Dinner stops at 7pm during the week, 6pm during the weekend. Hours subject to change during the summer. The bar is open until 11pm, except Friday's and Saturday's where it closes at midnight.
