New Macclesfield restaurant Salvatore's has opened its doors

There's a new restaurant in Macclesfield, and its unique, familial setting will feel familiar to many Macclesfield residents.

Salvatore's has opened its doors, and is a rebirth of the Italian restaurant formerly known as Rosanero.

Located at 83 Mill Street, Chef Salvatore Di Maio is back in business, after almost four years.

Macclesfield Nub News met with the business owner, who goes by Sal for short, and needs no introduction to many Macclesfield foodies.

"Salvatore's is an authentic Italian experience in the heart of Macclesfield", he said.

"We have changed the name from Rosanero, but the owner [Sal] is still the same.

"We are a very authentic, genuine, family-oriented business."

In the intervening years, Sal was catering for private events. But is delighted to be back cooking for the people of Macclesfield.

"I wanted to have a bit of time off", he explained.

"But the passion is still there, I decided one day I wanted to do it again.

"My mind was saying not to do it, but my passion overpassed the brain.

"The concept for the restaurant is simple, we are very family-oriented.

"A lot of people think Italian food is just pizza, pasta, which it is not.

"Italian cuisine is very vast, and that is what we are trying to do, and show each region in Italy who have their own way on making Mediterranean food.

The menu skews towards the south, as Sal is a Sicilian.

Dishes range from Lobster ravioli to Fish gnocchi, plus memorable items from the Rosanero days make the menu.

Sal is proud that to declare that pizza won't expand in your stomach, but politely refuses to pick a favourite dish!

His personal history with Macclesfield begins 22 years ago. He moved up north shortly after cooking for the Minardi Formula One racing team.

Then the Rossonero revolution began. Starting as a small restaurant of just four tables, to welcoming celebrities, footballers and of course the good people of Macclesfield.

With Salvatore's it is more of the same, complimented with Sal and his staff's friendly charm.

"I don't do Italian food with English taste, I do the traditional, the original, with our stamp," he stated.

"I don't want to be like 100 other Italian restaurants. We want to show a restaurant with authenticity.

If you can't make it to Mill Street, you can even other their food online.

But the majority of customers come and dine in, with many old Rosanero customers returning to support Sal and his staff in their next chapter.

"The first few weeks have been fantastic, it has been so nice to see all the people happy, and to have my old customers back," he revealed.

"They are so happy we are back. As I said, we have a family-like restaurant, people feel relaxed like they are at home, because that is the way they get treated, there is a more personal dining experience. The customer for me are not a number, they are people. I know all of them by name.

"Seeing customers again for the past few weeks for me has been a personal joy. For me, that is [recognition] of the good hard work of the past, that for me is a winning thing.

"My plans for the future of the restaurant is to give the people of Macclesfield a place where they can go, have a good time with family. And to let them explore new tastes, innovations and great drink. That is what it is all about."

There are no time limits on tables or eating your food between covers, to help the customers relax.

This is in addition to the relaxing ambience the restaurant already has visually, and sonically.

The business takes cash and card, and has covers for 60 people.

They have just introduced a set menu, for a way for Maxonians to experience a traditional Italian Sunday lunch.

Salvatore's is open Wednesday to Saturday 5pm to 10pm, and Sunday 12pm to 8pm.
