A new butty and ice cream shop is opening in Macclesfield.

Nicola Winder, a Gawsworth resident and former Medical Staffing Manager at Macclesfield Hospital, is embarking on an exciting new venture in Macclesfield.

She is set to open 'Lazy Joe's Sandwich Shop', a fresh and contemporary eatery located on London Road.

Formerly a hardware store, Nicola plans to transform the space into a vibrant sandwich shop offering gelato ice cream, drinks, pies and baked goods.

The business is named after Nicola's son.

This marks a new chapter as she transitions from her role at the hospital to run Lazy Joe's, comedically named after her son.

"I'm so excited about being my own boss," said Nicola.

"And to be part of a the community, because I've already felt that here.

"So many people have knocked on that door and said, 'what are you going to be?'.

The shop will open in August.

"I feel it's going to be a really good community hub for selling sandwiches and chill out, and we're going to have connection with the football club."

The shop will pride itself on having a modern atmosphere within the building.

Nicola explained just what kind of features we can expect from the establishment.

"What we are definitely going to have, is the touch screens for your menu," said Nicola.

The new venture is just a stone's throw from Macclesfield FC, with pies to be served on match days.

"It gives them the option to have a custom-made sandwich.

"So, you can have what you want."

Alongside being able to create your own sandwich to your liking, there will also be set sandwich creations available.

These types of sandwiches will have specific names relating to the types of tasty ingredients found within.

Nicola has worked at Macclesfield Hospital for 14 years, and will leave her job as Medical Staffing Manager to pursue this new venture.

"The New Yorker, which will have pastrami and gherkins with a mustard mayo on it," explained Nicola

"There will be a ploughman's, a breakfasty one with egg and avocado.

"We'll have a couple of breakfast paninis.

"We're going to have a range of pies because they'll go down a storm on matchday.

"And some sweet goods, teas, coffees, soups."

The eatery will also cater for those who are gluten intolerant, as Nicola, is a coeliac herself.

In the same way that you will be able to customise sandwiches, you will be able to customise your very own salad bowls.

Additionally, the gelato ice cream being served at Lazy Joe's will be sourced from Cheshire milk.

"You will get to choose the flavours, with a couple of sorbets in there," said Nicola.

"We're here to offer something a bit different.

"Sandwich shops tend to have the same model as you have the chalkboard at the back and here are your sandwiches.

"I want to make people come and have a different experience really."

In terms of seating, Lazy Joe's will have mainly outdoor seating with a breakfast bar inside.

This allows customers to sit and eat their sandwich as they watch the traffic go by.

Nicola's husband, Mark Winder, owner of 'Bear Grills Café' in Congleton was full of support for the shop's future.

"It's something that people who live on the Moss estate in Macclesfield, have never seen anything like this before," stated Mark.

"Hopefully they embrace it. I'm so excited about it."

Mark also coaches at the nearby football ground, for The Savage Foundation.

"The ice cream alone can bring people in," he proclaimed.

The shop aims to open during the first week of August.

Anticipation is building for the big day, with exciting times ahead for Lazy Joe's, the people of south Macclesfield, and beyond!
