SNEAK PREVIEW: What to expect from new Macclesfield pizzeria Tommy's

A new pizzeria is targeting a late February opening in Macclesfield.

First revealed to be coming to Macc a in recent days, Tommy's will serve fresh hand-made pizzas at affordable prices.

Tom wants his new venture to be the neighbourhood pizzeria for east Macclesfield residents, and attract punters from all over the town.

The 207 Buxton Road place to eat wants to be open by the end of February.

It is the expansion of a mobile pizza business started by Bollington resident Thomas Higgins (40).

"Tommy's is a brand new bar and pizzeria using hand-picked high-quality ingredients," he said.

"I've always worked in hospitality, worked my way up in various different roles, but it was never pizza.

"Until one day during COVID, when I was running a mobile bar at a campsite in Sutton, they asked me to do food.

"It was there where I came up with my pizza idea, and from there I got offers to do my first wedding, so I honed my craft and have been in love with making pizza ever since.

"It got to a point where I was so busy doing the pop-ups, that I thought I needed bricks and mortar."

The venue has an intimate feel. with no more than 20 seats, and a novel feature being drinks fridge directly next to the tables which will be hard to resist.

Tom's new restaurant will use Neighboured Brewing Co in Poynton, and work with Macclesfield Market Place beer curators R&G's Beer Vault to bring a rotating cast of tipples.

He's also teamed up with Bollington Wellington Road business Knowles Green Creative Tasting, who will pair wines with the items on the small menu.

Tom chose this to support a local business, but to also keep his carbon footprint low by using European wines-only.

While there are pubs across the road, there are no late night dining options on Buxton Road. So Tommy's will hope to fill a niche of quality drink and food.

"I want this to be a place you could come in on a whim on a date or with your mates," he explained.

"You don't have to go into town. Things are a bit more laidback here.

"We have 15 seats downstairs and have a private dining upstairs area with a separate kitchen that we might use for 'Meet the Brewer' events."

Tom wants the venue to be perfect for both a quiet night out or family vibes.

And Tom has even incorporated his family into the business.

This goes from naming the oven Sophie after his niece, to including artwork of his beloved auntie in the dining area.

The decor, familial touches, and the fact you can see Tom cook each pizza echoes the relaxed street food theme he is going for.

"I'm going for family feel and reusing things. I've just put in a mirror which has been in my family since 1972," he added.

"And the menu is going to be as traditional as possible.

"There will be four or five core pizzas and a few special ones which will come and go with the seasons. There will be vegan and vegetarian options too.

"I pride myself on sourcing the best cheese, the best flour and the best olive oil. The time and the care I go to sourcing the ingredients is what makes me stand out.

"Our oven is also authentic, it is a new electric oven that has been given the seal of approval by the The True Neapolitan Pizza Association in Napoli. This means it won't get smoky indoors or smell of pizza outside as well. It cooks in two minutes at 450C, and there's no gas used.

"I've also tried to use reused wood to reduce my impact on the environment, and use as little plastic as possible.

"Tommy's is self-built and self-funded, using local suppliers. And I'd like to thank everyone who has helped get me to where I am today."

Tommy's should be open around this time next month.

It will be open from 12pm at weekends, and slightly later on weekdays to not compete with fellow independent business Yas Bean, for which Tom is a regular at.
